Here’s a simple apple pie recipe using frozen shortcrust pastry:


### Ingredients


**For the filling:**

- 6-8 cups apples (about 6-8 medium apples; Granny Smith and Honeycrisp are great)

- 3/4 cup granulated sugar (adjust to taste)

- 1 tablespoon lemon juice

- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- 2 tablespoons all-purpose flour (for thickening)


**For the pie:**

- 2 sheets of frozen Unroll shortcrust pastry (thawed)

- 1 egg (for egg wash, optional)


### Instructions


**1. Prepare the filling:**

- Peel, core, and slice the apples.

- In a large bowl, toss the apple slices with sugar, lemon juice, cinnamon, nutmeg, and flour. Set aside to let the juices mix.


**2. Assemble the pie:**

- Preheat your oven to 425°F (220°C).

- Roll out one sheet of shortcrust pastry and place it in a pie pan, pressing it into the edges.

- Fill the pastry with the apple mixture.

- Roll out the second sheet of pastry and place it over the filling. You can create slits for ventilation or a lattice top if you prefer.

- Trim any excess pastry and crimp the edges to seal. If desired, brush the top with a beaten egg for a golden finish.


**3. Bake the pie:**

- Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 35-45 minutes, or until the apples are tender and the crust is golden brown.

- If the edges brown too quickly, cover them with foil.


**4. Cool and serve:**

- Allow the pie to cool for at least 2 hours before slicing to let the filling set.

- Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
